Cheesy Crackers (aka, knockoff cheezits)
1 cup flour
4 Tbsp cold, cubed butter
8 oz shredded sharp cheddar cheese
3/4 tsp salt
1/4 tsp cayenne (I use much, much less, just a dash)
Dump ingredients into food processor. Pulse until mixed and crumbly.
Roll out dough (on waxed paper), fairly thin. Like 1/8 of an inch, not quite 1/4 of an inch.
Cut into pieces/shapes. Mini cookie cutters work well for cute shapes, otherwise your pizza cutter will work fabulously.Place pieces, separated, on a parchment covered baking sheet.
Bake at 350*F for 18-20 minutes, check. Can bake for up to 25 minutes or so, depends on your oven and cracker thickness.
– A single batch makes about one giant cookie sheet’s worth – like my cookie sheet that takes up almost all of my oven. One batch lasts maybe a day, day and a half.
– You should be able to squish the dough into a ball with your hand without it totally crumbling apart. One time it was super dry in my house apparently, so I had to add a little water until I got the dough to the right consistency.
– Treat it a little like pie dough. It’s a pain to roll out when the butter’s gotten warm and it starts sticking to things. So either make ’em quick, or let the dough sit in the fridge for a few minutes if it’s been out on the counter too long before rolling
