Okay Becky, just for you.

Grandma B’s Waffle Cookies

1/2 cup butter or margarine (I used real butter)
6 Tbsp cocoa (powder)
3/4 cup sugar
2 eggs
1 cup flour (sifted)
1 tsp vanilla
1/4 tsp salt
1/3 cup chopped nuts (optional – I don’t do nuts)
Chocolate frosting (I did chocolate buttercream from the Better Homes and Gardens plaid cookbook)

Directions: Melt butter; add remaining ingredients.  Beat well.  Drop by teaspoonful onto hot waffle iron.  Bake for one minute.  Frost with chocolate frosting.

Use a regular waffle iron, a belgian one probably wouldn’t work as well.  For larger/normal sized cookies, do one teaspoonful to a square – for smaller kid sized ones, you can squish two smaller plops of dough per square.  I did the frosting from scratch because I didn’t want an allergic reaction (no preservatives or artificial dyes!).  I think Grandma just used stuff from a jar.
